The choice of dough
It's worth noting that the main problem isn't so much the topping, but the pizza dough. Classic recipes are made with refined flour, which is often high in carbohydrates. Even the thin version doesn't meet the requirements of a slimming diet.
To make a light pizza, you should use flours with a low glycemic index (GI). They are most often wholegrain, meaning they retain all of the grains from which they are prepared. This type of flour is distinguished by a high index (number after the "T" in the classification). It is 150. In addition to the GI, it is a good idea to choose gluten-free options to accommodate any intolerances. Recommended options include, among others:
- legumes (chickpeas, lentils, quinoa, lupin, etc.);
- almond;
- cauliflower;
- coconut;
- sweet potato.
Although they are extremely low in carbohydrates, they are high in protein (50% for almond flour). They also contain essential nutrients. They can be mixed together to optimize the taste and texture of the dough.
Alternative flours are suitable for making fathead dough . This dough is specially designed for light pizzas. It is also made with eggs and low-fat cheese such as mozzarella.
The sauces and toppings to favor
The ideal sauce for a light pizza is homemade. If you prefer to stick with traditional tomato sauce, it shouldn't contain oil. Another option is pistou, made with blended basil and garlic. For those who prefer white pizzas, choose a light crème fraîche.
There are many possibilities when it comes to toppings. Seasonal vegetables are highly sought after. Mushrooms are also suitable, as they are low in fat. You can also add lean meats such as chicken and white fish.
Cheese is a must-have ingredient when it comes to pizza. Goat cheese and mozzarella are the most recommended. Not only are they light, but they also add a melting texture and exquisite flavor.
Rainbow pizza, an example recipe
The "Rainbow" pizza is an example of a light pizza. It surprises with its explosion of colors. The visuals will make your mouth water.
To prepare the dough, combine 250g of wholemeal flour, one egg yolk, 0% fat natural yogurt, and salt. Knead everything together until you have a soft dough, then let it rest for 30 minutes at room temperature. Roll out the dough as thinly as possible and place it on a non-stick baking sheet. The sauce can then be poured over the dough. A white base is ideal for this recipe.
For the filling, choose the following ingredients to obtain the corresponding colors:
- fresh tomatoes (red);
- peppers (orange);
- corn (yellow);
- broccoli (green);
- beetroot, vitelotte potato or red (purple) onion.
Cut them and arrange them in concentric circles. Before baking, season the mixture, then sprinkle with grated cheese and herbs to taste. Bake for 15 minutes at 220°C. Your light pizza is now ready to enjoy.
